3 Winter Warmer Ramen Recipes | Ramen Bowl Ideas

Ramen recipes provide a quick and easy meal that really warms you up from the inside out. Ramen bowls always feature a rich miso broth that knocks any tomato or chicken soup out of the game. Combine this with a handful of vegetables, your choice of fish or meat and top with a poached egg, spring onions and chilli, and you’ve got yourself the perfect winter warmer dish. Here are 3 of the best ramen recipes to try this winter!

Creamy Veggie Ramen

Vegetable ramen is healthy, rich in vitamins and minerals and will leave you satisfied all day! Rather than creating a broth with meat bones or miso paste alone, a vegetable ramen recipe is made with soy milk. The soy adds both colour and depth to the dish and really brings all the ingredients together. In fact, in Kyoto, soy milk ramen is a popular ramen recipe.

Ingredients:

  • ¾ cup of water
  • Dried Shiitake mushrooms
  • Dried kelp
  • Bamboo shoots
  • Sweetcorn
  • Spring onions
  • 1 Egg
  • 2 garlic cloves
  • 1 tsp of ginger
  • 2 tbs sesame oil
  • 1 tbsp toasted white sesame seeds
  • 2 tsp broad bean paste
  • 2 tsp miso paste
  • 1 cup soy milk
  • 2 tsp soy sauce
  • Egg noodles
  • Pickled radish
  • Chopped peanuts

Method:

1: First, soak the dried Shiitake mushrooms and kelp in water for 30 minutes before adding to a saucepan and slowly bringing to a boil. Once it begins to boil, remove the mushrooms and allow the kelp to simmer. Add sweetcorn to the pan to cook until tender.

2: Mince garlic and ginger and roughly chop the spring onions. Add these to a pan with sesame oil. Add the broad bean paste and miso, and make sure to stir constantly.

3: Then add soy sauce and toasted sesame seeds.

4: Add the soy milk and gently stir until combined into a rich soup. Add the bamboo and cooked sweetcorn.
